Creamy pork mushroom soup

Description: Creamy pork and mushroom soup. Grilled pork is nice in the soup. One of the best winter soup recipes.
Serves: 2
Cooking time: 20 minutes

Ingredients 

  • Brown mushrooms – sliced, 160g
  • Pork loin – chopped, 100g
  • Onion or shallots – chopped in fine pieces, ½ pieces or 80g
  • Olive oil – 1 tablespoon
  • Flour – 1 tablespoon
  • Garlic – chopped, 1 piece
  • Single cream – 200 mL
  • Water 200 mL
  • Vegetable stock cube – ½ piece
  • Salt – 1 dash
  • Ground black pepper – 1 dash
  • Fresh parsley – 1 teaspoon

Method

1. Coat the pork with flour.
2. In a non-stick frying pan, add the oil and pork, then cook over medium heat. When the pork is cooked, put them aside.
3. In the same pan, add the garlic, onion and mushroom and cook until they soften.
3. Add the water, stock cube, and salt. Cook over medium heat for 5-6 minutes.
4. Add the cream and pork into the pan and cook for another 5-6 minutes. Mix well.
5. When the soup thickens, turn off the heat.

To serve: sprinkle freshly cut parsley and ground black pepper.

Nutritional Tips

I love mushrooms, so I used a lot, but if you prefer, you could use fewer mushrooms—or even add different types to the soup. I made it almost like a stew, as there were a lot of mushrooms when I was eating. This is a good way to eat more vegetables. However, a large portion may increase your fat intake; therefore, you might consider using light cream or milk instead of cream. If you have this as a side dish, it would be ideal to have some starchy carbohydrates such as bread, rice, pasta, or potatoes. In addition to this, try using less oil with these carbohydrates. Simply eating bread may be a better idea; opt for brown bread, which provides more fibre.

Chicken can also be used if you would like to avoid red meat and fat. I will write some more soup recipes another time.
