Description: Creamy mushroom soup at home. No need to have a cream. Just milk. You need to finish a large portion of milk? This may be a good idea.

Ingredients
- Brown mushrooms – sliced, 160g
- Onion or shallots – chopped in fine pieces, ½ pieces or 80g
- Unsalted butter – 5g
- Flour – 1 tablespoon
- Garlic – chopped, 1 piece
- Milk – 200 mL
- Water 200 mL
- Vegetable stock cube – ½ piece
- Salt – 1 dash
- Ground black pepper – 1 dash
- Fresh parsley – 1 teaspoon
- Swiss cheese – 10g or 1 teaspoon – according to personal preference, you may add more
Method
1. Add the vegetables to a deep pot with the butter over medium heat until the onions are soft.
2. Add the flour and mix constantly until the powdery appearance disappears and a thick paste forms (about 1 minute).
3. Add the water, stock cube, milk, and salt. Cook over low to medium heat for 5-6 minutes, stirring occasionally.
4. When the soup begins to thicken to your desired consistency, remove it from the heat.
To serve: Sprinkle with freshly chopped parsley and ground black pepper. You may also add grated cheese on top.

Nutritional Tips
Without using fatty cream, you can still make a wonderfully creamy soup using milk. I love mushrooms, so I used a lot, but if you prefer, you can certainly use fewer, or even add different types of vegetables to the soup.

Enjoying this soup as a side dish, or even having it warm for breakfast with bread on a cold day, would be very comforting.
A Note on Health
The only point we should note is the salt intake. Soup is satisfying and helps with satiety; however, the salt content can be higher than you think. Cooking at home is a great way to consume less salt compared to buying ready-made meals, including soups.
