Smoke salmon & asparagus pasta 

Description: So simple and easy to prepare. Just prepare the asparagus, smoked salmon and lemon. Can be served hot and cold. In summer, cooling it down in the fridge before serving may be a good idea. Serves: 2
Cooking time: 15 minutes

Ingredients 

  • Linguine (alternatively, spaghetti) – 180g
  • Asparagus – steamed, 160g
  • Smoke salmon – 100g
  • Extra Virgin olive oil – 2 tablespoons
  • Lemon – 1 piece

Method

1. Follow the package instructions to cook the pasta al dente in plenty of boiling water.
2. Meanwhile, steam the asparagus.
3. When the pasta is almost cooked, heat the olive oil in a large non-stick frying pan over medium heat.
4. Stir in the pasta and asparagus, then cook for a couple of minutes. 
5. Place the pasta on the plate. Then add the salmon on top.

To serve: Sprinkle ground pepper and squeeze lemon.

Nutritional Tips

The combination of salmon and asparagus will not go wrong in general in my opinion. Putting them together in pasta is actually really good. This can be served as a pasta salad if you wish. Asparagus is one of the good sources of folate. You may add more asparagus and have them as a salad.

Folate rich foods are liver, yeast extract (Marmite), edamame beans and green leafy vegetables. A diet rich in other vitamin Bs and C is usually folate rich. 

When deficiency occurs, it will cause elevation of homocysteine in the body. High homocysteine levels may be associated with an increased risk of heart disease. 

Folate is beneficial to women for the preconception period to decrease the possibility of neural tube defects in the newborn. Therefore, requirements are significantly increased in pregnancy.
