Sausage and green pepper curry flavour sauteé

Description: It’s so simple and good.

Cooking time: 10 minutes

Ingredients

  • Sausage – chopped, 4 pieces, 80g
  • Curry powder – 1 teaspoon
  • Garlic – chopped, 2 cloves
  • Ground black pepper – 2 dashes
  • Salt – 1 dash
  • Asparagus –  cut in 4 pieces, 230g

Method

1. Steam the asparagus.
2. Meanwhile, in a large non-stick frying pan, add the sausage, garlic, and ground black pepper over medium heat.
3. Add the asparagus, curry powder, and salt, then mix well.

Nutritional Tips

Asparagus is low in calories (20 kcal per 100g according to USDA) and consists of water more than 90%. Asparagus is a good source of fibre, folate, vitamins C, vitamin E and vitamin K. However, asparagus is quite a delicate vegetable with a short shelf life. Vitamin C is weak against heat, and easily destroyed by oxygen. In some countries, frozen asparagus is available, so you may consider buying frozen ones.

Vitamin K is involved in blood clotting and bone health. It is also produced by gut bacteria in our colon. Our body can store vitamin K, therefore, we do not need to have them in our diet every day. It is required about 1 μg per day per kg of our body weight in adults.

Please note that people who use blood thinning medication such as warfarin should not eat too much okra or natto, as the high vitamin K content can interfere with the drug. As always, you must seek professional advice in doubt.
