Yam potato & egg soup

Description: Comforting Japanese style soup. Miso soup is not the only soup that Japanese people consume. 
Serves: 2
Cooking time: 10 minutes

Ingredients 

  • Yam potatoes – pureed, 100g
  • Egg – beaten in a small bowl, 1 medium
  • Chicken stock cube – ½ cube
  • Soy sauce – ½ teaspoon
  • Sake cooking wine – ½ teaspoon
  • Water – 400mL
  • Ground black pepper – 1 dash
  • Chive – chopped, 1 teaspoon

Method

1. In a small saucepan, add the stock cube, soy sauce, sake and water, then bring it to boil.
2. Add the yam potatoes to the pan and cook until they boil.
3. Add the egg to the pan and heat until the egg is cooked according to your preference.

To serve: Sprinkle chives and black pepper on top.

Nutritional Tips

Miso soup is not the only soup that Japanese people consume. I must admit that Japanese people do tend to have miso soup every day. Some may even have it more than once a day (breakfast and dinner). However, we consume different soups, including this yam & egg soup. You may not think of adding yams to the soup, but it actually goes really well. This is also good when you are ill: instead of having a heavy cream soup, this helps to get something into your stomach.
