Carbonara risotto

Description: Carbonara style risotto. No cream is needed. Same ingredients but with risotto rice. Thick and creamy sauce with risotto rice for a special occasion or even just a weekend meal to treat yourself. 
Serves: 2
Cooking time: 30 minutes

Ingredients 

  • Risotto rice – 120g
  • Medium egg yolk – 4
  • Pancetta – 50g
  • Parmesan cheese – 40g
  • Garlic – 2 cloves chopped in fine pieces
  • Black pepper – 2 dashes
  • Salt – 1 dash
  • Fresh parsley – 1 tablespoon

Method

1. In the same pot, pour in the rice and salt, then let it simmer while stirring until the liquid is absorbed. Continue adding water until all the liquid is absorbed and the rice is plump and soft.
2. Meanwhile, heat a large non-stick frying pan and fry the garlic and pancetta.
3. Beat the eggs in a large bowl with the grated cheese and black pepper. 
4. When the rice is ready, add it to the bowl from 3. Then mix well to coat everything. 
5. Place the rice on the bowl, then add the fried garlic and the pancetta. 
To: Sprinkle black pepper, parsley and parmesan cheese according to your preference.

Nutritional Tips

For carbonara lovers, this may be one of the alternative dishes. It is a risotto but still tastes like carbonara. It is still as amazing as the original carbonara. In Japan, we eat raw egg and white rice with soy sauce. I found similarity in this dish, eating a runny egg with rice but with cheese. I personally enjoyed this more than I thought. I will try to cook this with guanciale (pig cheek) next time if I can find some in the shop 🙂

I believe this is one of the best recipes with runny egg dishes. However, please make sure that the egg is as fresh as possible and disinfected during production, etc. Avoid eating raw or runny eggs if you are in a vulnerable group (e/g, elderly, weakened immune system or pregnant women).
