Asparagus Wrapped in prosciutto (Asperges enveloppées dans du jambon cru)

Description: Asparagus wrapped in prosciutto. Can be served as a canape, finger food for parties or a side dish. 
Serves: 3
Cooking time: 20 minutes

Ingredients 

  • Prosciutto – cut in 4 pieces, 4 slices 
  • Asparagus – cut in 4 pieces, 240g 
  • Ground Black pepper – 1 dash
  • Parmesan cheese – 3g or 1 teaspoon
  • Extra virgin olive oil – 1 teaspoon

Method

1. Wash the asparagus and pat them dry. Trim off the woody stems.
2. Steam the asparagus for 3 minutes and then cut them into 4 pieces. 
3. Wrap the prosciutto around 3 pieces of asparagus.
4. Grind black pepper, sprinkle parmesan cheese and add a splash of olive oil.

Another carb-free canapé recipe. For those who are on insulin treatment, including type 1 diabetes, this may be a convenient canapé for your home parties. This can also be one of your 5-A-Day. This is another recipe for vegetable “haters”… you could try it with your kids. 🙂 (Be mindful of the salt content in ham).

I would recommend steaming asparagus instead of boiling so that you can minimise the vitamin C loss. But if you choose to boil, try to minimise the cooking time and use the boiling water for soup so that you can save a bit of vitamins from that.
