Ingredients
- Spaghetti – 180g
- Cherry tomatoes – 8 pieces or 50g
- Garlic – pureed, 2 cloves
- Extra Virgin olive oil – 2 tablespoons
- Okra – 6 pieces or 60g
- Lemon – 1 piece
- Salt – 1 dash
Method
1. Follow the package instructions to cook the pasta to al dente in plenty of boiling water.
2. Meanwhile, steam the okra.
3. When the pasta is almost cooked, heat the olive oil in a large non-stick frying pan over medium heat.
4. Stir in the pasta, tomato, and garlic, then cook for a couple of minutes.
5. Place the pasta on the plate, then add the okra on top.
To serve: Sprinkle ground pepper and squeeze lemon.

Okra is known as an African vegetable, or it may be classified as a fruit botanically, like tomatoes and avocados.
What I can say is they are all one of the foods considered “healthy” and “beneficial” to maintain our health.
They can be boiled, steamed, fried or sautéed and included in different dishes such as salads, fried vegetables, pasta or soups. It may not be common or well-known in Europe, but it is widely eaten in India, the Middle East, Turkey and Japan.
In Japan, people tend to eat them in a soup (egg soup, miso soup, tomato soup), steamed and eaten with soy sauce and bonito flakes. Today, I tried Okra pasta, which turned out quite nicely. Therefore, I am sharing the recipe, simple ingredients and tasty.
