Oven bake courgette & chorizo 

Description: Looks beautiful and tastes amazing. Not complicated. Scoop out, stuff and bake !
Serves: 6 pieces
Cooking time: 30 minutes

Ingredients 

  • Courgette – Cut in half, 3 piece or 600g
  • Chorizo – chopped, 100g
  • Cherry tomatoes – sliced, 8 pieces or 50g
  • Cheese (mozzarella) – grated, 100g*
  • Fresh parsley – chopped, 2 tablespoons
  • Black pepper – 1 dash
    *Alternatively, cheddar cheese, Monterey Jack can be used

Method

1. Scoop out the courgette flesh by using a spoon. Be careful overdoing otherwise, it may make holes.
Meanwhile, preheat the oven 180C.
2. Remove the water from the courgette and put them in a bowl. Mix with cheese.
3. Stuff them into the hollowed courgette (no.1).
4. Place tomatoes and chorizo on top and grill in the oven for 20 minutes until the cheese is melted.

To serve: Sprinkle bacon and ground black pepper.

Nutritional Tips

Courgettes are low in calories, less than mushrooms for the same weight: 1 piece of courgette (200g) is only 34 kcal (according to USDA). When you try to eat courgette and look at it in the supermarket as a pack or a pile, you may feel like “I am bored of courgette” or “No more idea what to cook with them”. However, courgette is very versatile: it can be added to many different dishes such as pasta, risotto and burgers, it can be stuffed, rolled or used in ajillo, kushikatsu (Japanese deep fry skewer) and tempura. I will introduce more recipes another time.

Courgettes are commonly dark or light green, but you may see yellow ones as well. There are also round-shaped ones.  I personally found they are really cute as they just look like a little watermelon. I am not sure if there are different colours, but I have seen green ones 😉
