Simmered chicken and mushroom in Japanese style (鶏ときのこの煮物)

Description: Soft and juicy chicken and mushrooms perfectly matched. You can use any type of mushroom.

Ingredients

  • Chicken breast (alternatively, thigh) – 160g
  • Mushroom (any type) – 160g
  • Sake cooking wine – 1/2 tablespoon
  • Mirin cooking wine – 1/2 tablespoon
  • Soy sauce – 1/2 tablespoon 
  • Ground black pepper – 1 dash
  • Water – 150mL

Method

1. In a pot, heat the water, sake, mirin and soy sauce.
2. Once boiled, add the chicken, mushrooms, and black pepper to the pot.
3. Cook until the chicken is cooked completely.

Nutritional Tips

Cooking without oil is sometimes challenging. But it is still possible to cook a nice meal without adding oils. There is always some fat content in ingredients (e.g. meat, fish) and it is possible to bring their own flavours into other ingredients you cook with.

In this recipe, you can use chicken breast and they are still very soft when cooked. In addition, the dish is full of flavour from mushrooms and chicken without adding any oils. You may mix chicken breast and thigh or add different types of mushrooms so that you can enjoy different flavours depending on what ingredients you add.
