Stuffed mushroom

Description: Just a little bit of twist can make mushrooms special. This can be a canape, finger food or an appetiser. This is also one of the common ippin-ryori (一品料理) which is Japanese à la carte.
Serves: 2
Cooking time: 15 minutes

Ingredients

  • Mushrooms (shitake, chestnut or portobello) – 200g or 10 pieces
  • Minced meat (chicken or turkey) – 100g
  • Garlic – chopped in fine pieces, 2 cloves
  • Ginger – chopped in fine pieces, 1 teaspoon
  • Salt – 1 dash
  • Black pepper – 1 dash
  • Ponze – 2 teaspoons
  • Plain flour – 1 teaspoon

Method

1. Remove the mushroom stems and cut into small pieces. (If you wish, you can make an incision on the mushroom umbrella, it makes a little pattern when cooked)
2. Mix the garlic, ginger, mince meat and chopped stems. Stuff them on the back of the mushrooms.
3. Heat a medium size non-stick frying pan, place them bottom side down (meat side). Place the lid and cook until the meat is thoroughly cooked.

To serve: Pour ponzu sauce.

Mushrooms are edible fungi and there are various types of mushrooms in different shapes, sizes, and colours. Some are toxic but the ones you buy at the supermarkets are generally healthy and tasty. In Japan, there are so many mushrooms including enoki, brown shimeji (buna-shimeji), white shimeji (bunapi), hon-shimeji, eringi, shitake, maitake-mushrooms, oyster mushrooms (hiratake), nameko-mushrooms, Matsutake-mushrooms (this is the most expensive mushroom, like French caviar, one piece can cost 10,000 JPY or more)…

Shiitake mushrooms are common mushrooms in East Asia. It is used for many different kinds of dishes such as soup (miso soup, egg soup), roasted mushrooms, hotpot, mixed with meatballs, mixed with minced meat steak. In addition, shiitake is often used to extract dashi. Shiitake is low in calories (34 kcal/100g according to USDA). Therefore, in East Asia, it is widely eaten as a healthy ingredient, including for type 2 diabetes and weight control. Shiitake mushrooms are rich in vitamin Bs.
