Okra Wrapped in bacon (Gombos enveloppées dans du bacon)

Description: Okra wrapped in bacon. Can be served as canape, finger food for parties or an izakaya-style dish.
Serves: 2
Cooking time: 15 minutes

Ingredients

  • Okra – 80g or 8 pieces
  • Bacon – cut in half, 80g or 4 slices
  • Ground black pepper – 1 dash
  • Toothpicks – only if needed to fix ingredients

Method

1. Wash the okra and pat them dry. Trim off the edge if preferred.
2. Wrap the bacon around the okra.
3. Grind black pepper on each side.
4. Braise them in a non-stick frying pan with a lid for about 3-4 minutes in total until cooked (the bacon becomes brown).

To serve: Squeeze lemon or sprinkle additional ground black pepper if you prefer.

Nutritional Tips

Another trick for vegetable “haters”. It is very savoury and … it worked on my husband, you may want to try it with your family? 🙂 

However, bacon is high in fat and salt. If you eat a larger portion, fatty food or ready meal in other meals, then you may consider adding some healthier options.

For example, to balance it out, you could include other dishes with more carbs, such as rice, quinoa, potatoes, pasta, bread and cereals or with more fibres (vegetables and fruits). Also, consider using ingredients and seasonings with less fat or salt.
