Description: Feel like eating aubergine? Feel like eating some roasted or grilled vegetables? Why don’t you try one of these?
Serves: 2 pieces
Cooking time: 30 minutes

Ingredients
- Aubergine – Cut in half, 1 piece or 200g
- Pork mince meat (4%) – 100g
- Onion – chopped, ½ piece or 75g
- Tomato tin – 1 tin (200 mL)
- Ground black pepper – 2 dashes
- Salt – 1 dash
- Fresh Parsley – 1 tablespoon
- Cheese (parmesan, mozzarella) – grated or chopped, 100g
- *Alternatively, cheddar cheese, Monterey Jack can be used.
Method
1. Scoop out the aubergine flesh by using a spoon. Be careful not to make holes. Meanwhile, preheat the oven to 180C.
2. In a non-stick pan, fry the meat, onion and aubergine.
3. Add the tomato tin and salt to the pan, then cook until the excess of water evaporates.
4. Stuff them into the hollowed aubergine (no.1).
5. Put the cheese on top and grill in the oven for 20 minutes until the surface becomes golden brown.
To serve: Sprinkle parsley and ground black pepper.

Nutritional Tips
Aubergine is actually more versatile than you think. Dishes with aubergines can be Tempura, Kushi-katsu (Japanese deep fried-skewer), simmered aubergine, roasted aubergine, grilled aubergine, Saute or pasta. I will introduce more recipes in the future.
Cheese is a good source of calcium. However, it is important to bear in mind that cheese is an animal product. Therefore, it is also high in fat which means high in calories. It does not mean you have to exclude it from your diet unless you choose to or are advised by your doctor/dietitian (due to your medical condition etc). The key is balance so you can consider eating smaller amounts, low-calorie versions or consume not too often.
