Enoki Namul Korean Style

Description: Simple and tasty enoki mushroom namul. If you chill them in the fridge before serving, they will be refreshing and crispy.

Ingredients

  • Enoki mushroom – steamed, 200g
  • Soy sauce – 2 teaspoon
  • Salt – 1 dash
  • Sesame oil – 1 tablespoon
  • Spring onion – chopped, 1 teaspoon
  • Garlic – pureed, 1 piece
  • Sesame seeds – 1 teaspoon
  • Bonito flakes (optional) – 2 teaspoons

Method

1. Steam the enoki mushrooms. Once they are cooked, pat them dry.
2. In a small bowl, mix the steamed enoki mushrooms with salt, soy sauce, garlic puree, bonito flakes (optional) and sesame oil.
3. Top it up with sesame seeds and spring onion.

Nutritional Tips 

Mushrooms are edible fungi and there are various types of mushrooms in different shapes, sizes, and colours. Some are toxic but the ones you buy at the supermarkets are generally healthy and tasty. In Japan, there are so many mushrooms including enoki, brown shimeji (buna-shimeji), white shimeji (bunapi), hon-shimeji, eringi, shitake, maitake-mushrooms, oyster mushrooms (hiratake), nameko-mushrooms, Matsutake-mushrooms (this is the most expensive mushroom, like French caviar, one piece can cost 10,000 JPY or more).

Enoki is a long, white mushroom, and typically has a crispy texture. It is used for many different kinds of dishes such as soup (miso soup, egg soup), roasted mushrooms, hotpot, mixed with meatballs, mixed with minced meat steak. Enoki is low in calories (37 kcal/100g according to USDA). Therefore, in East Asia, it is widely eaten as a healthy ingredient, including for type 2 diabetes and weight control.
