Nutritional Tips
The beef tongue may be a little rare to find in the supermarket or in a restaurant. But if you find it by any chance, this is one of the recipes you may want to try. BBQ sauce or simply salt and black pepper is well known. But this lemon and spring onion mixture not only gives a refreshing taste but also gives nutritional benefits.
The average absorption of iron from meat may be approximately 20-25% and it is already better than inorganic iron. Inorganic iron can be absorbed only when it is in reduced form Fe2+. Ascorbic acids (e.g. lemon) are a reducing agent. So adding lemon as a salad dressing or a part of the sauce would enhance the absorption of iron in particular for those who follow a plant-based diet.
