Grilled Portobello Mushroom

Description: Why don’t you cook a fancy portobello mushroom bake? Tasty and amazing portobello mushrooms can be grilled in the oven for a large family at once. Best match with a glass of white wine.

Cooking time: 25 minutes

Ingredients

  • Portobello Mushroom – 1 piece
  • Monterey Jack Cheese – 1 slice or 20g
  • Parsley – 1/2 teaspoon
  • Tomato – cut in small pieces, 15g or medium ¼ piece
  • Ground black pepper – ¼ dash

Method

1. Heat the oven to 200°C for 5 minutes. Meanwhile, remove the mushroom stems and cut them into small pieces. 
2. Stuff them on the back of the mushroom.
3. Bake the mushroom for 10 minutes.
4. Add cheese, parsley and black pepper on top. Bake for another 20 minutes at 200°C in the oven.

Nutritional Tips

Mushrooms are edible fungi and there are various types of mushrooms in different shapes, sizes, and colours. Some are toxic but the ones you buy at the supermarkets are generally healthy and tasty. ‘Portobello Mushrooms’ are generally bigger in size and their texture can be described as meaty. They are often seen in burgers. Today, I would like to introduce simply grilled portobello mushrooms. 

Vitamin B3 prevents and cures the deficiency disease pellagra (a severe sunburn-like skin lesion where the body areas exposed to sunlight such as the neck, chest, and back of the hands, may become brown and peeling).

Diarrhoea, dermatitis, and dementia are known as the three Ds. Diarrhoea is caused by gut epithelial lining damage, so it is likely to cause other nutrient deficiencies too. This disease is associated with overdependence on maize as a staple food in certain parts of the world such as Southern Africa or India. Vitamin B3 plays an important role as the coenzymes NAD (nicotinamide adenine dinucleotide) and NADP (nicotinamide adenine dinucleotide phosphate) in a lot of redox reactions. It can be synthesized within the body from the precursor tryptophan which is an essential amino acid. In the UK, 40 per cent of this comes from meat and 20 per cent from vegetables. Cereal grains also contain a large amount of preformed niacin, but it may not be biologically available. All wheat flour (except wholemeal) is added with synthetic niacin by law and most breakfast cereals are fortified.
