Description: It is a simple elegant pasta yet easy to prepare for the weekday dinner. A splash of lemon gives a fresh flavour to the cream sauce. Creamy yet not heavy and it has a lemony, garlicky with a little nutty taste from the parmesan cheese.

Ingredients
- Spaghetti – 140g
- Chicken thigh (alternatively, breast) – cut in bite size, 180g
- Single cream – 150ml
- Garlic – chopped, 2 cloves
- Salt – 2 dashes
- Ground black pepper – according to personal taste
- Parmesan cheese – grated, 40g
- Lemon juice – 1 teaspoon or squeeze from 1 wedge of lemon
Method
1. Cook the penne pasta until al dente in plenty of boiling water with salt.
2. While boiling pasta, heat a large non-stick frying pan over medium heat, then add garlic, chicken, salt and fry these.
3. When the chicken is cooked, add the cream to medium heat and stop before it boils.
4. Add the hot drained pasta, and parmesan cheese and mix well (you can add lemon juice and mix with the sauce or squeeze before serving).
To serve: squeeze the lemon and sprinkle ground black pepper according to a personal taste

Chicken is a good source of vitamin B3(Niacin), vitamin B6, vitamin B12, some vitamin B1(Thiamin) and vitamin B2(Riboflavin). A healthier option could be using chicken breast instead of chicken thigh and low-fat cream or milk instead. It would increase of protein intake due to chicken breast while reducing the fat content. Alternatively, you may consider using less chicken.
