Description: Soft and juicy chicken and daikon perfectly matched. It is simple, yet nice when you feel sick or when it is cold. It helps to warm you up.

Ingredients
- Chicken breast – chopped into bite-size, 150g
- Daikon radish – chopped into thin strips, 150g
- Spring onions – chopped, 20g
- Chicken stock cube – 1 piece
- Water – 450 mL
- Ground black pepper – ¼ dash
Method
1. In a pot, heat the water and add the stock cube once it is boiled.
2. Add chicken to the pot.
3. When the chicken is almost cooked, add daikon radish and cook for a few more minutes until the chicken is cooked completely (you may cook longer depending on how soft you want the radish to be).
4. Pour the soup into a small bowl and add the spring onions on top.
To serve: sprinkle ground black pepper.

Nutritional Tips
Chicken is a good source of protein, vitamin Bs (especially, B3, B6, B12), phosphorus and zinc. Chicken is quite versatile and can be added to a variety of dishes as a protein source. Therefore, it is important to think about what you are eating as a whole package (e.g.: what ingredients or seasonings you are using or what cooking method you are implementing). In addition, it is also important to think about which part of the chicken you are consuming: thighs, breasts, skin, drumsticks, and wings. Chicken breast generally contains less fat and more protein (20.85g per 100g, 172 kcal, raw) while chicken thigh can be 16.52g per 100g, 221 kcal or chicken wing can be 17.52g per 100g, 191kcal according to USDA. So depending on the diet, people who are aiming to lose weight or build muscle may prefer chicken breast although people who follow a keto diet or low-carb diet may benefit more from thighs, wings, and drumsticks to achieve their nutritional requirements.
Chicken breasts can be dry when cooked, however, breasts tend to be quite moist and soft in a soup. It is also possible to cook a tender breast by grilling. It is usually recommended to use a foil to cover, lower temperature or some oil. I will introduce some recipes using that method another time.
Daikon actually means “big root” in Japanese. You might think that Daikon radish is too plain and often eaten in hot pots, but daikon radish can turn into so many different dishes. Because it is plain on its own, if you cook it with seasoning, it absorbs flavours really well and becomes a delicious vegetable! It can be eaten raw or cooked, as part of a salad or as part of garnishes for sushi or tempura, miso soup, or vegetable soup with broth.
