Description: One of the best breakfast dishes. Easy and quick, yet very delicious. The combination of creamy scrambled egg and smoked salmon makes a perfect match to the bread. I personally like Finnish rye bread but it goes well with any type of rye bread.

Cooking time: 10 minutes

Ingredients
- Large egg – beaten, 1
- Milk (3.7%) – 1 tablespoon
- Unsalted butter – 5g
- Smoked salmon – cut into a bite size, 25g
- Chive – chopped, 1 teaspoon
- Rye bread – 1 slice (25g)
- Ground black pepper – according to the personal taste
Method
1. Beat the egg and the milk together in a small bowl.
2. Heat the oven to 200℃ and toast the bread for a couple of minutes.
3. Heat a non-stick frying pan, add the butter and egg mixture, then cook gently over low heat, stirring until the egg thickens. Make sure to cook slowly so that the egg becomes more creamy.
4. Stir the salmon into the egg and continue to cook for a very short time (to your preference).
5. Top the toasted bread with the scrambled egg and a sprinkle of chives.
To serve: Ground black pepper

Nutritional Tips
It is easy for a delicious and nutritious breakfast. For both busy and lazy people, breakfast should be something simple and quick but tasty and hopefully nutritious… then this would be one of the best options. Who cooks salmon properly in the morning… probably a handful of people. You can use leftovers from the previous day or smoke salmon to cook.
Rye bread is a good source of fibre and contains a small amount of fat. Compared to some breads such as white bread, rye bread has a lower glycemic index, which means it causes a slower increase in blood sugar than white bread after being eaten. Finnish rye bread is very special and I personally like Reissumies Finnish Rye bread, which is darker in color, round, and a bit sour.
Egg and salmon make a good nutritious combination, which provides a good source of protein, some carbs, and vitamins. You may consider having some fruits or a smoothie to snack between meals such as bananas, grapes, apples (or even a mixture but these ones are greater energy sources compared to other fruits) for the intake of energy, vitamins, and minerals.
