Spaghetti Carbonara

Description: Smashing. Real Italian-style carbonara. No cream is needed for this recipe. All we need is cheese, egg, and black pepper, nothing else. A combination of thick and creamy sauce with pancetta makes the perfect spaghetti carbonara for a special occasion to spoil you completely.

Cooking time: 25 minutes

Ingredients

  • Spaghetti – 180g
  • Egg yolk large – 4
  • Pancetta – 100g
  • Parmesan cheese – 40g
  • Garlic – 2 cloves chopped in fine pieces
  • Black pepper – 1 teaspoon
  • Olive oil – ½ tablespoon

Method

  1. Follow the package instructions to cook the spaghetti to al dente in plenty of boiling water with salt.
  2. Meanwhile, heat a large non-stick frying pan and fry the garlic and pancetta.
  3. Beat the eggs in a large bowl with the grated cheese (keep aside a small amount to put before serving) and black pepper.
  4. When the pasta is ready, drain it and add it to the bowl from 2. along with the olive oil, the garlic, and the pancetta. Then mix well to coat everything. Sprinkle black pepper and parmesan cheese and serve.

Nutritional Tips

This dish is quite simple to cook and just fabulous, but it might be ideal to serve with some greens as it is high in calories, fat, protein, and salt. You may consider having dishes that are low in these and more carbs and fibers which are likely to be fruits, vegetables and potatoes, bread, and cereals for other meals. Also, a healthier option would be using less pancetta (70g) and pasta (150g). This would lower the energy intake of each serving by 100 kcal. Eggs are known as one of the superfoods as they are extremely nutritious, containing a very large amount of nutrients compared to calories (A large egg contains 72kcal with 6.3g of protein 4.8g of fat, and trace amounts of carbohydrates according to USDA). It is rich in phosphorus, vitamin A, D, B2, and B12, and also contains small amounts of almost all vitamins and minerals our body needs, which are calcium, iron, potassium, zinc, vitamin E, folate, and many more. Eggs are also a good source of vitamin B1, and B3. The yolk contains most nutrients while egg white contains only protein. Eggs are also filling and they are used in some diet programs to help lose weight as they make you feel full and eat overall less calories. They used to be considered unhealthy because they contain cholesterol. However, it is said that saturated fat affects the cholesterol in the blood (Saturated Fat, Heart UK, 2024).

Rocky (from the film, I visited his statue in Philadelphia (US) and tried the “Philly cheese steak”, which was so yummy and I won’t talk about it here but I do recommend if someone is visiting) drinks eggs before his workout. Eggs can be used in so many different ways (fry-up, omelette, poached, or as part of a dish such as pancakes, or minced meat steaks) and in different forms from runny to hard. I personally think that eggs should always be in the fridge to boost health.
